Homemade Hummus

Well, I’m officially back in the kitchen after a long hiatus. Mostly due to the fact I was in Nantucket all summer, but then again, I don’t really have an excuse for the last two months. I was long overdue for a weekend spent in the kitchen making new recipes and experimenting. One thing you may not know about me is I LOVE to be in the kitchen. Whether I am baking or cooking, I get this warm and fuzzy feeling.

Last week I watched Gaby’s live Instastory and she made this hummus. Immediately, I ran to Trader Joe’s to pick up the ingredients and just like that, I was excited to be in the kitchen again.

HOMEMADE HUMMUS (from What’s Gaby Cooking)

INGREDIENTS

1 15-ounce can garbanzo beans, drained, rinsed and peeled (This is a very important step!)
1/2 cup tahini
2-3 tablespoons freshly squeezed lemon juice, more as needed
2-3 small cloves garlic, roughly chopped
3/4 teaspoon kosher salt, or more to taste
3 tablespoons of water
A drizzle of EVOO to garnish
DIRECTIONS
I use this food processor, but if you have a Vitamix, it is even easier and less mess! In the food processor, blend the peeled garbanzo beans for one minute
After the beans are a powdery consistency, add the tahini (I found mine at TJ’s), lemon juice, garlic, salt and 1 tablespoon of water and blend until smooth.
You will need to add a few more tablespoons of water depending on the consistency you like.  Keep blending until the mixture is creamy and smooth.
To serve, add a drizzle of olive oil, a sprinkle of paprika and a squeeze of lemon juice on top.
I personally love to eat with pita chips, but carrots, cucumber and red peppers are a healthier option.
