SUMMER GRILLING
Wednesday officially marked the beginning of summer and the start my favorite season. Maybe it is the fact I grew up in Arizona and still get all the feels when I head to the pool, but I have always loved summer. There are a few things that really get me into the summer spirit: pool days, watermelon and cook outs. Maybe this is why Fourth of July has always been my favorite holiday.
To kick off the season, we invited a few friends over for a little summer solstice get-together. My favorite thing to do for a casual week night dinner is to cook the entire meal on the grill with a little help from La Vaquita.

Grilled watermelon salad topped with La Vaquita Queso Fresco
Grilled Corn on the cob rolled in a little butter and La Vaquita Cotija
Grilled Salmon, Chicken and Burgers
Grilled Zucchini, Red Peppers, Onions and Carrots
Grilled Peaches with Vanilla Ice Cream
If your first thought is “fruit on the grill? Is this girl nuts?” This was my initial thought, but I was soo wrong. The grill brings out the sweetness in the watermelon. To get started make sure your grill is VERY hot, this way you get those nice grill marks. Leave on the grill for just a few minutes and then add a cheese like, La Vaquita Queso Fresco for a bright and mild flavor. To brighten up the flavors, add some fresh basil leaves and drizzle with a little balsamic reduction.
This dish takes less than 10 minutes time and can also be made on an indoor grill pan if you don’t want to venture outside.
Watermelon Pizza with La Vaquita Queso Fresco
1 Large Watermelon cut into triangles
1 tsp Local Honey
1 package of La Vaquita Queso Fresco (you can pick up La Vaquita products at your local Central Market, HEB or Kroger in Texas)
Bunch of fresh basil, chiffonade
Balsamic Reduction (make your own or by pre-made)
Salt and Pepper to taste
