Day 4 of New Year, New You comes in the form of juice. I am all about jumpstarting a healthy habit and a juice cleanse, for me, is the perfect way to start eating healthy. This year one of my goals is to eat CLEAN foods, I am not saying I am never going to have a slice of pizza but I am trying to change the way I approach eating those types of food. Side note: I am allergic to dairy but I LOVE cheese, ice cream, and pretty much everything else I am not supposed to eat. For some reason I cannot kick this habit. I also have other issues that doctors suggested I stay away from gluten, but guys, pasta is my thing. I would rather have a plain bowl of noodles than just about anything else in the world. I know there are gluten-free alternatives out there and they have become substantially better than in the beginning, but I just can’t get passed the fact that I shouldn’t eat bread or pasta on a regular basis.
This is where the juice cleanse comes into play. A few months ago Garden of Flavor reached out to me and asked if I would like to try their juice cleanse. I thought to myself “3-days of only drinking juice,” is that worth it? After contemplating, I decided to try it. I really hate to fail, so I knew I was going to need some major will power in order to get through these three days. Long story short, it was not all that bad and the result, I felt light and energized at the end. It was a great kick-start to a healthy eating routine.

Favorite healthy recipe would be Kale and Quinoa Salad. Cook quinoa. Wash the Kale, whisk in some extra virgin olive oil, a teeny bit of Dijon mustard, lemon juice and then mix it with the quinoa. DELICIOUS!

I’ve been on a healthy kick lately. There a loads of recipes out there that are fantastic. One of my top favs is baked zucchini chips. Dip them in an egg white, then coat them in panko bread crumbs that has been stirred with a teeny bit of pepper and parmesan cheese. Then just BAKE! It feels as though it’s an indulgence since it’s crunchy and very tasty.

My mom just introduced me to this amazing recipe and it’s sooooo easy!!! Cover your baking dish with 2 tablespoons of olive oil. In a bowl combine 3 tablespoons of olive oil, 2 garlic cloves minced, half a lemon’s juice, 1/2 teaspoon of salt, and 1/4 teaspoon in pepper. Cut 2 peppers (red and yellow) into slices and add into the mixture along with a bag of green beans. Mix these all together and then add in the 2 chicken breasts. Place slices of lemon on the bottom of your baking dish, place the chicken breasts on top and then pour the veggies and mixture onto the chicken. Bake at 400 degrees for 50 minutes. Super easy and super delicious!!

My favorite recipe is a gluten-free recipe I found awhile back for a banana pancake.
2 eggs + 1 banana + dash of cinnamon
Wisk together and cook up in a pan.
They are not the perfect looking pancake you would expect, but they are absolutely delicious. Thanks for the giveaway!

wish I had more time for recipes but since I’m home with a newborn these days, my favorite healthy snack is just Greek yogurt and fruit. Filling and satisfies my never-ending sweet tooth!
Dried strawberries! Like candy, but healthy! To make:
Halve or quarter the strawberries, depending on their size; place on a baking sheet; season with salt and pepper;
Dry in the oven for three hours at 100° C / 210° F. It’s that easy!

I’m very simple when it comes to cooking so I can’t think of a particular recipie but I have added wheat grass (Amazing Grass from Whole Foods) to my diet. I drink it once a day and it has a taste similar to green tea. I love that it helps me get a serving of greens into my diet because I am always lacking in that area!
I love anything Brussels sprouts! & juice smoothies in the am!
I love hummus and veggies together for a snack!
