Remember last week when I posted about my exciting trip to New York? Well, I am excited to share a fun project I worked on with some blogging friends Hallie, Devon, Natalie, and Mel for Sauza Sparkling Margaritas and GLAM.  The five of us girls headed to Atlantic Beach for a fun girls weekend. The house we stayed in was absolutely amazing (seriously my dream kitchen, well and everything else), but the friends I made were even better. All of us girls had an absolute blast, especially ending the night with a big splash by Hallie

The weekend started after we got all dolled up, of course everyone had the cutest outfits. It was too funny that we all ended up color coordinating (I swear this was completely random). I wore a pair of Joie lace shorts, a Madewell silk tank, this Anthropolgie necklace, and my favorite Zara heels; which ended up being the perfect outfit for an outdoor dinner and drinks.

After getting ready, we headed down to the kitchen for a few Sauza Sparkling Margaritas and some simple apps.  Devon and I made some delicious guacamole (my favorite recipe is below) and couldn’t resist having a few bites before everything was finished. We made a simple, fresh mexican fiesta and of course had plenty of Sauza Sparkling Margaritas.  My favorite flavor is the Original Lime.  The margaritas all have the perfect amount of bubbles and are ready- to- serve which makes the prep as easy as ever! 

My ideal Girls Night involves making everything simple so I can actually enjoy the night rather than stressing in the kitchen. We all chipped in and helped with the prep which ended up being my favorite part of the day. Of course, we always had a glass of Sauza Sparkling Margaritas by our sides. 

Our dinner so delicious and the stories that were told made my face hurt for days from all of the laughing! We made fish tacos, fresh grilled corn, an arugula salad, and the most amazing dessert (I will spare you the details, but let me just tell you it was so delicious)- especially with the Wild Berry flavor margarita.

After dinner, we decided to take the party poolside and continue the night with some more drinks!  The weather was absolutely beautiful and the perfect night to dance and splash around by the pool.  One of the girls made some delicious fruit popsicles that were the perfect side kick to my Original Lime Sauza Sparkling Margarita.

Here is the recipe for my favorite guacamole:  

2 whole avocados 

1 ripe tomato (or a package of grape tomatoes )

1 white onion 

1 clove of garlic 

a handful of cilantro 

1/4 cup of fresh squeezed lime juice and a sprinkle of salt 

All you do is smash the avocados, mix in the chopped tomatoes, onion and garlic, sprinkle the cilantro and pour on the fresh lime juice and salt and serve! I like to dip either warm tortilla chips or fresh carrots, and you are all set!

Talk about a slow week, I cannot believe it is only Wednesday- it feels like it should be Friday.  I think the reason for my feelings is that I am doing a cleanse to try to jump start some healthy eating around this neck of the woods, and I am totally craving a huge bowl of pasta (hence the pictures above).  I am a total carb girl at heart- you name it, I love it.  I have been wanting to go gluten free (for a lot of reasons) for over a year, but I can’t seem to get past the bread and pasta cravings.  So since I am not eating it this week, I just needed a little eye candy to make my mouth water.  Are any of y’all gluten free?  How did you get past those cravings for your favorite foods? I would love to hear if anyone has recommendations or suggestions!

So remember when I promised that I would be posting a simple dinner once a week? About that, I wish I could say I have been better about making great meals every week but to be honest I have been quite lazy when it comes to cooking.  I have been eating a lot of cereal and fruit and some good ol’ PB&J sandwiches.  Honestly cooking meals for one can be so hard and when I get home at 7pm after working out the last thing I want to do is make a big meal and have to clean up afterwards.  So I broke my promise and once I get back on a cooking kick, I will be sure to share some recipes and keep my word.  But for now, have you ever made caramelized Brussels sprouts?  They are really delicious and I kind of think they taste like popcorn (not sure why).  Goop has a great recipe, check it out.  

On a side note, I am going to a Stella and Dot party tonight and I was just checking out all of the new arrivals online.  Let’s just say I am going to be in trouble.

Ever want a healthy snack that is also really easy to make? Well, this isn’t very healthy but it is surely delicious and easy to make.  I decided to try a few popcorn recipe for my friend Michelle’s Oscar Party this past Sunday. Since the best part about watching the Oscars is watching the red carpet, drooling over Bradley Cooper, the popcorn and champagne, the popcorn bar ended up being a huge hit. I whipped up three different flavors, that included parmesan and thyme, s’mores, and standard brown butter and sea salt. Each person got their own individual brown bags to snack out of and if I do say so myself- it was delish!

One of my goals this year is to make dinner and lunch at home during the week in efforts to be healthier and maybe save a little money.  Living (kind of) alone has made trips to the grocery store a little more challenging since sometimes I feel like I cannot eat things fast enough before they go bad. So, in order to battle that, I just make a few more trips to the grocery store and try to buy less on each trip (note: this is not a great money saver, but I hate to waste food).  In the act of trying to eat healthy, non processed meals, I have been purchasing lots fresh fruits, veggies and herbs.  Sometimes I just have not been in the mood to use six different bowls, pans, utensils, etc. when I am just cooking for myself. So this is where the Simple Dinners stem from.  I  have a few up my sleeve that only use a cutting board, bowl, knife and fork but I would love any suggestions you have.  So in effort to document and hold myself accountable, once a week I will be posting a Simple Dinner “recipe” I made during the week. To kick off the series, I started with a easy Caprese salad.  Maybe the easiest dinner around with a total of 5 minutes prep, I was eating before 7:00pm (which never happens).  Enjoy! 

CAPRESE SALAD with Fresh Mozzarella


  • Utensils needed: Bowl, 
  • Half a container of Cherry Tomatoes
  • Pearl Mozzarella (this eliminates the time for slicing- and they are the perfect size-ratio for the cherry tomatoes)
  • Fresh Basil (I love fresh herbs, but you can always use dried)  
  • Pinch of Salt and Pepper  
  • Drizzle Extra Virgin Olive Oil and Balsamic Vinegar over the top

So I’ll be honest, I had all the best intentions on making pancakes this weekend to celebrate National Pancake day today. Unfortunately for Patrick,  I was totally lazy on Sunday morning and we ended up with some box made blueberry muffins instead.  Thankfully, Patrick was still grateful for any kind of breakfast in bed.  It is one of our favorite things to do on Sunday mornings, and secretly I wish that someone would magically make breakfast for us so we never had to get out of bed before noon.  (these are the weird things I think about sometimes). Well, the muffins ended up being delish and they were a perfect way to jump start our productive Sunday.  Do ya’ll have a Sunday morning ritual?

Super Foods

Lately I have been doing a little research on living a healthier life. When I say healthier, I mean not eating hot dogs at work and pizza on the weekends. I am not trying to diet or lose weight but I have had a long run with a bad stomach and eating foods that I know that make me sick… but I mean who can blame me, everyone needs a little ice cream and cheese in their life.  In the last couple years I have noticed that eating those types of food not only make me sick but they tend to make me tired and sluggish.  There is some debate on what the superfoods really are, but here are a few I am going to try to focus on to live a better, healthier life. 

Blueberries- contains great antioxidants and are low in calories 

Eggs- “Studies show if you eat eggs at breakfast, you may eat fewer calories during the day and lose weight without significantly affecting cholesterol levels,” says Elizabeth Ward, MS, RD

Quinoa- my new favorite go to meal, my friend Julie made a simple, great recipe the other night for dinner that I have been craving ever since.  

Salmon- this is a great protein alternative that is fully of Omega 3’s, especially good for women.  

Kiwi- this is one superfood that I never would have thought of,  Wards, MS, RD says”One large kiwi supplies your daily requirement for vitamin C.” 

Non-Fat Plain Yogurt- this one has been a struggle for me, sometimes I am okay eating a small dose but I try to stay clear of all dairy products and try to make up my calcium intake from other foods.

Broccoli- broccoli has always been one of my favorite foods, it is rich in a plethora of vitamins and tastes good too.  

Beans- Through all of the research I have been reading I have noticed everyone is talking about beans, beans, and more beans because of their high fiber content.  I am not the biggest fan, but maybe I will start adding them in to my weekly routine.  

Sweet Potatoes- this delicious vegetable is a great replacement for any ordinary white potato and has wonderful flavor.

I’d Rather Be Eating

This morning was my treat day at work and due to my laziness I brought boring bagels.  My plan was to make some homemade biscuits and try a few flavored butters and let me tell you, I would much rather be eating that than an everything bagel.  Maybe I will make them this weekend for P to enjoy! It is supposed to be beautiful in Kansas City tomorrow. I am looking forward to eating brunch on the porch, taking the dogs to the park, and maybe hitting the driving range.  Do you have any exciting plans for the weekend?

There is a French bakery in New Orleans called Cafe du Monde that is famous for their beignets, especially on Fat Tuesday.  Mardi Gras (Fat Tuesday) is the last day to indulge on delicious, rich foods before Ash Wednesday.  Here is the recipe for beignets from the famous French cafe.  Hope you enjoy and have fun today!
